Day 11. Post a recipe. Or if you don't cook, try a new recipe and write about how it turned out (pictures please!)
I decided to try a new one the other night. I had several qualifications: it had to be quick, easy and something the kids would like.
This recipe was SUPPOSED to be with turkey inside, but I forgot to pick up some turkey at the market, so I scoured my freezer for another protien.....and came up with thin, boneless pork chops. It turned out great even with the chops instead of the easier turkey!
Turkey (or whatever protein you have in your house) and cheesy pockets
Ingredients:
Some kind of meat, cooked and sliced up small
1/3 c. reduced fat cream cheese
2 Tbs. miracle whip dressing (I used reduced fat)
1/4 c. mozzarella cheese
1/4 tsp. dijon mustard (I actually used 1/2 tsp like it called for in the recipe, but I think the mustard taste was too strong)
1 can refrigerated biscuits (8-10)
1. Brown your protein of choice in the way of your choosing. I used spanish olive oil (I always use spanish O.O. because of its nutty flavor. I just like it better than regular EVOO). I seared the chops in some Sp.OO with salt, freshly ground pepper and 3 chopped garlic cloves....always use fresh garlic. Yummy flavor!
2. Allow meat to rest for about 7 min. to hold in the flavor and cool down enough to chop into small pieces.
3. While meat is resting, prepare the cheesy filling. Mix the miracle whip, cream cheese, mustard and mozz. cheese until well blended.
4. Open can of biscuits and flatten with a rolling pin. Then place a heaping tsp. of filling into center of each biscuits. Cut up meat into small pieces, then add to each biscuit as well. Once filling and meat is in the biscuit, fold it over and seal it with your fingertips.
5. Bake at 350 until the tops are golden brown (about 10 min.)
** Greg was out with a friend after work, so I was just cooking for myself and the kids. I asked them to make an expression to how well they liked the meal. Here is what I got:
Gotta laugh at those chickies.....they did not LOVE it, but they ate it, which is good for my kids :) Next time I am cutting down on the mustard but I will def. try it again.....maybe with chicken next time? The one thing they did eat like piggies was the strips of pork that I had left over.....so another meal idea is just the prepared pork chops. They would be good on top of a salad too. Those kids :) Enjoy!
