Bare Cupboard Challenge Day #3

Lesson last night: You do not need every single ingredient for a dish to turn out great! It may taste different than the original intent, but it might not be too horrible!

Last night we made another favorite: Chicken Paprikash......but I was missing the sour cream that you normally would add to the sauce to make it creamy! I crossed my fingers and made it anyway....I'll let the pictures speak for themselves:

In short, it was a hit. Wednesdays are nights we eat without daddy, but we always leave him leftovers....and when we came home from church, all the leftovers were gone. He loves it so much he ate the whole thing. So, who needs sour cream anyway???

Chicken Paprikash (with or without sour cream)

4 chicken breasts (or 6 tenderloins which is what I had on hand)
2 Tbs. flour
salt and pepper to taste
Bread crumbs with Itallian seasoning
2 Tbs. olive oil
2 eggs
1/4 tsp. cayenne pepper (add some heat but not too much!)
1 Tbs. paprika
1 1/2 c. chicken broth
1/4 c. sour cream (*or not!)
1 cup rice cooked to package directions with about 2 tsp. chicken broth granules added for flavor)

1. Cut each chicken breast into strips then dredge in egg, then seasoned breadcrumbs


2. Brown chicken in olive oil then remove from pan


3. Add chicken broth, paprika, cayenne pepper and cook until boiling (about 5 minutes)

4. Stir in sour cream (or not) and return chicken to pot. Heat through and serve over rice

On a different note, last night we ran out of dishwasher detergent for the dishwasher. *GASP*......so, in an effort to stay true to my word of not spending more money on non-essentials, I asked my daughter to wash the dishes. Her response? "What do you mean?" I had to laugh. Once I showed her how, I must say.....she was THRILLED. She wanted more and more dishes and was disappointed when the chore was done! During that time we went over her AWANA verses and spelling words while I cooked. In all, a wonderful experience!


I learned another important lesson: Attitude is EVERYTHING. We made it fun.....Ellie got to wear the apron she helped me make.....and it was a joyous experience!

  2. we have a picture of me living in Crysttal drive washing the dishes in an apron that looks JUST like this one of ell :) I loved this post by the way.... and I had to laugh at your use of the word "dredge..." don't use such big words, those of us intellectually lower have a hard time with them..LOL!

  3. Looks like you have a wonderful helper on your hands. :) Good job Ellie! I substitute ingredients ALL the time. It makes recipes much less expensive to modify them to what you have on hand. I've used generic tomato soup in place of tomato paste. I interchange sour cream, plain/vanilla yogurt and Philadelphia cooking cream or cream cheese in place of whichever ingredient from that list I am missing. If I don't have anything creamy like that I might just add a little milk.

    Your dinner looks very tasty and I'm glad everyone liked it! I can't think of a time that I substituted and it actually flopped. You may remember I even substituted pancake mix for flour in bread I made because I was out of flour!
