Last night we had one of our "Brinner's" for the week: Monte Cristo Sandwiches. This recipe was originally from one of Rachael Ray's magazines....so you know it's good :)
Ingredients:
Loaf of bread (I used a loaf of french bread that was stale and hard....either use it up, or throw it out! In the efforts of not wasting, I decided to go for it.....and it was GREAT!)
Cheddar cheese
apples
bacon or ham (Original recipe calls for bacon, which actually is better, but we did not have any so I used ham instead!)
2 eggs
milk
cinnamon
nutmeg (optional if you like nutmeg)
syrup
1. Cut loaf into slices enough for 1 sandwich per person......or more if you are trying to use up a loaf of stale french bread!
2. Mix 2 eggs with some milk (about a cup) and some cinnamon and nutmeg to taste....think french toast!
3. Cut thin slices of apple......I always love any excuse to use my apple peeler!
4. Assemble sandwiches with apple, cheddar cheese, bacon or ham and another piece of bread.
5. Dip entire sandwich in egg/milk mixture and put onto a greased griddle. I use my electric skillet because it is amazing. If you don't have one, you need to get one.....wonderful! Grill until browned on each side and cheese is melted. Serve with syrup for dipping. As Rachael would say....YUMMO!
Looks pretty good to me for a bare bones meal! Pretty clever. I used my apple peeler this week too (or rather your father did). He was helping me make a pie.

ReplyDeleteI LOVE monte cristo's! One of my absolute favorite sandwiches. I've never had bacon or apples in it though (or cinnamon for that matter). I'll have to give your recipe a try.

Can you show/send me some pictures of the wood block your apple corer is attached to? I have my grandma's antique one but I have a difficult time finding a surface thin enough for it to attach to. Where did you get that wood block? Buy/make?
Megan, my dad made it for me :) I will take a pic of it, though so you can see it. If you have someone in your life who is good at woodworking and it looks pretty straight-forward!~
