My friend JEN turned me on to this Strawberry Bread. It is great because strawberries are dirt cheap in the markets right now, and lots of people have opportunity to go strawberry picking and need some new fun recipes to use them up!

Here is a great and easy one.
Ingredients:
3 c. all purpose flour (I used whole-wheat)
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 tsp. vanilla
2 c. sugar
4 eggs, beaten
1 c. cooking oil (next time I am going to go for 1/2 c. oil and 1.2 c. apple sauce)
1 1/2 c. strawberries, sliced
Directions:
Makes 6 small loaves or 2 large loaves
Preheat oven to 350. Spray loaf pans lightly with cooking spray and set aside.
Combine all ingredients except strawberries and mix together with a wooden spoon. Stir in berries.
Place the batter in the prepared pans. Bake 35-40 min. for small loaf pans or about 60 min. for large loaf pans. Cool 10-15 min. before removing from pan.
