When I was young, my mama used to make me chicken-broth rice as a treat....and it has stuck with me. Sometimes I just make it because I love it. Sometimes when I am sick I make it because it settles great in my stomach. Ellie loves it as well.....so here's the recipe. Yummy RICE!
1 cup basmati or jasmine rice (I like the fragrant rices, but my mom just fixed me plain old long grain as a kid!)
1 1/2-2 cups. water
3-4 chicken bullion cubes or 3-4 tsp. bullion granules
butter
parsely
Bring water and bullion to a roiling boil, then add rice. Reduce heat to low, then simmer for 20 minutes, covered, until water is completely soaked in.
Remove rice from heat and add 1-2 Tbs. butter and allow to melt in. Add parsely to taste.
Yummy. I think I will make it for a side for dinner tonight!
